Start your day right with a delicious vegetable and egg medley.
Ingredients:
  • 0.25 cup olive oil
  • 0.25 cup sliced fresh mushrooms
  • 0.25 cup chopped onions
  • 0.25 cup chopped green bell peppers
  • 6 eggs
  • 0.25 cup milk
  • 0.25 cup chopped fresh tomato
  • 0.25 cup shredded Cheddar cheese
Instructions:
  • In a skillet over medium-high heat, saute mushrooms, onions, and peppers in olive oil until onions are translucent.
  • Combine beaten eggs and milk in a mixing bowl. Pour the egg mixture over the vegetables and tomatoes, stirring until the eggs are set. Just before the eggs are finished cooking, sprinkle cheese on top. Serve promptly.
