Chocolate Extreme Cupcakes

Indulge in decadent frosted chocolate cupcakes for a special family treat!
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 3 oz unsweetened baking chocolate
  • 3 oz semisweet baking chocolate
  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 1 cup semisweet chocolate chips (6 oz)
  • 1/2 cup butter, softened
  • 1 box (1 lb) powdered sugar (4 cups)
  • 1/2 cup whipping cream
  • 2 teaspoons vanilla
  • Dash salt
Instructions:
  • Preheat your oven to 350°F and line 12 jumbo muffin cups with jumbo paper baking cups.
  • Combine flour, baking soda, and 1/2 teaspoon salt in a small bowl. In a microwave-safe bowl, heat baking chocolate uncovered on High for 1 to 2 minutes, stirring once, until smooth and softened.
  • In a large bowl, use an electric mixer to cream 1 cup of butter until creamy. Slowly add brown sugar and granulated sugar, mixing well. Incorporate eggs one at a time, mixing after each addition. Pour in melted chocolate and 1 teaspoon of vanilla, mix thoroughly. Alternately add the flour mixture and buttermilk, mixing on low speed until well combined. Divide the batter evenly into muffin cups, filling them three-fourths full.
  • Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Allow it to cool for 5 minutes, then remove from pans onto cooling racks. Let it cool completely, which should take about 45 minutes.
  • Microwave chocolate chips in a small bowl for 1-2 minutes until smooth. In a large bowl, beat butter until creamy. Add powdered sugar, melted chocolate, whipping cream, vanilla, and salt, blending after each addition. Frost cupcakes.
