Beautiful white chocolate blondies loaded with colorful sprinkles and finished with a luscious white chocolate ganache.
Ingredients:
  • 125g butter, chopped
  • 107.50 gm caster sugar
  • 64.38 gm milk
  • 250g white chocolate, chopped
  • 2 eggs, lightly beaten
  • 332.50 ml plain flour
  • 125.00 ml magic star top sprinkles
  • 180g white chocolate, chopped
  • 83.33 gm thickened cream
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Grease a 20cm square cake pan that is 6cm deep, and line the base and sides with baking paper, ensuring to extend the paper by 5cm above the edges.
  • In a medium saucepan, melt butter with sugar, milk, and half of the chopped chocolate over low heat. Stir constantly until sugar is fully dissolved and chocolate is completely melted. Transfer the mixture to a large bowl and let it cool for 10 minutes.
  • Mix egg, flour, and baking powder into cooled chocolate mixture until just combined. Gently fold in remaining chopped chocolate and ¹⁄³ cup sprinkles. Transfer mixture into prepared pan. Bake for 30 minutes or until a skewer inserted into the center comes out with moist crumbs clinging. Let it cool completely in the pan.
  • Prepare the White Chocolate Ganache by combining the white chocolate and cream in a microwave-safe bowl. Microwave on HIGH for 1 minute, stirring halfway through, until the mixture is melted and smooth. Chill in the refrigerator.
  • Top the blondies with a generous layer of rich ganache. Finish with a colorful sprinkle of remaining sprinkles. Let sit for 20 minutes to set. Cut into 16 equal-sized squares and serve.
