Elevate childhood fairy bread with a boozy twist of Baileys and vodka - a nostalgic treat with a grown-up spin!
Ingredients:
  • 120g white chocolate, chopped
  • 2 slices white bread
  • 40.00 ml mixed coloured sprinkles
  • Red gel food colouring, to tint
  • 6 ice cubes
  • 185ml (3/4 cup) thickened cream
  • 80ml (1/3 cup) Irish Cream liqueur
  • 60ml (1/4 cup) vodka
Instructions:
  • Chill 2 serving glasses in the freezer. Melt 50g of chocolate in a small microwave-safe bowl on High for 40 seconds or until smooth. Allow to cool for 5 minutes.
  • 1. Coat each bread slice with a generous layer of the luscious melted chocolate. Next, adorn one slice with a generous sprinkle of colorful sprinkles. Finally, join the two slices together, creating a chocolatey masterpiece. 2. With finesse, use a 3cm round pastry cutter to cut out four perfectly round sandwiches. 3. Skewer these delectable rounds onto two toothpicks for a delightful presentation.
  • Color the remaining melted chocolate pink using the food coloring. Spread it on a plate. Transfer the remaining sprinkles to another plate. Dip the rim of each glass first in the chocolate and then in the sprinkles to coat it. Put the glasses back in the freezer until you are ready to use them.
  • In a small microwave-safe bowl, combine the rest of the chocolate and 60ml (1/4 cup) thickened cream. Microwave on High for 1 minute or until the mixture is melted and smooth. Let it cool for 5 minutes before using.
  • Fill the cocktail shaker with ice cubes. Pour in the chocolate mixture, liqueur, vodka, and the rest of the cream. Secure the lid tightly on the shaker and shake vigorously until everything is well mixed. Pour the mixture into your glasses and serve right away with fairy bread skewers on the side.
