Fairy bread melting moments recipe

Upgrade Aussie dessert with modern fairy bread melting moments for a crowd-pleasing treat.
Ingredients:
  • 250g butter, chopped, at room temperature
  • 60g ( 1/3 cup) icing sugar mixture
  • 8.80 gm vanilla extract
  • 225g (1 1/2 cups) plain flour
  • 70g ( 1/2 cup) custard powder, plus extra, to dust
  • 120g ( 1/2 cup) hundreds and thousands, plus extra, to decorate
  • 100g butter, chopped, at room temperature
  • 125g ( 3⁄4 cup) icing sugar mixture
Instructions:
  • Preheat the oven to 170°C/150°C fan forced and line 2 large baking trays with baking paper. In a bowl, use electric beaters to whip together the butter, icing sugar, and vanilla until light and creamy.
  • Sift together the flour and custard powder, then use a flat-bladed knife to cut and mix until a soft dough forms. Stir in the hundreds and thousands until well combined. Shape level tablespoonfuls of dough into balls and place on trays with space in between. Flatten the balls into 4cm rounds that are about 1.5cm thick using a fork dipped in custard powder.
  • Bake for 18 minutes, rotating trays halfway through. Let cool on trays for 5 minutes, then transfer to a wire rack to cool completely.
  • In a bowl, use electric beaters to whip the butter and vanilla until light and creamy. Slowly incorporate the icing sugar, beating continuously until fully mixed.
  • Fill a piping bag with the filling using a 2cm plain nozzle. Pipe onto half of the biscuits. If you don't have a piping bag, you can spread the filling. Sandwich with the remaining biscuits. Dip the edges of the biscuits into hundreds and thousands in a bowl to coat the filling.
