Create festive lemonade scones with only 4 ingredients. Ready in under 30 mins for instant party vibes.
Ingredients:
  • 525g (3 1/2 cups) self-raising flour
  • 250ml (1 cup) lemonade
  • 185ml (3/4 cup) thickened cream, plus 1 tbsp extra
  • 30g (1/4 cup) hundreds and thousands, plus 1 tbsp extra
Instructions:
  • Preheat your oven to 220C/200C fan forced. Line a large baking tray with baking paper. In a large mixing bowl, create a well in the centre of the flour. Pour in the lemonade and cream, then gently stir with a spatula until just combined.
  • Combine the dough until it comes together, then transfer it to a lightly floured surface. Flatten the dough into a 1.5cm thick disc and divide it into 4 equal portions. Divide 1 tablespoon of sprinkles into thirds and sprinkle over 3 of the portions. Stack the portions, with the plain one on top.
  • Roll out the dough on a lightly floured surface to a 2cm thick disc. Use a 6cm round cutter to make scones. Combine any leftover scraps to make more scones. Arrange the scones 1.5cm apart on a baking tray.
  • Brush the tops with additional cream and sprinkle extra hundreds and thousands. Bake until golden, about 18 minutes.
