Wholesome Buddha bowl with frozen corn, bell peppers, brown rice, and refried beans for a delicious fajita twist - quick & flavorful!
Ingredients:
  • 1 teaspoon coconut oil
  • 1 cup frozen bell peppers
  • 1 cup frozen corn
  • 2 cups refried beans
  • 2 cups cooked brown rice
  • 0.25 cup guacamole
Instructions:
  • In a skillet over medium heat, warm coconut oil and add frozen bell peppers and corn. Season with salt and black pepper, then stir and cook until heated through, about 5 to 7 minutes.
  • Distribute refried beans, brown rice, and bell pepper-corn mixture equally into 2 bowls then garnish each with 2 tablespoons of guacamole.
