Fajita Pizza

Spice up pizza with fajita flair. Ole!
Ingredients:
  • 2 tablespoons vegetable oil
  • 1/2 pound boneless skinless chicken breasts, cut into 1/8- to 1/4-inch strips
  • 1/2 medium bell pepper, cut into thin strips
  • 1 small onion
  • 1/2 cup thick & chunky salsa
  • 1 1/2 cups Original Bisquick™ mix
  • 1/3 cup very hot water
  • 1 1/2 cups shredded mozzarella cheese (6 ounces)
Instructions:
  • Preheat the oven to 450°F and place the oven rack on the lowest position. Spray a 12-inch pizza pan with cooking spray.
  • Preheat a 10-inch skillet over medium-high heat. Add oil and swirl to coat the bottom and sides. Sauté chicken for 3 minutes, stirring often. Add bell pepper and onion, and cook for an additional 3 to 4 minutes, stirring frequently until vegetables are crisp-tender and chicken is fully cooked. Remove from heat and stir in salsa before setting aside.
  • Mix Bisquick and very hot water in a small bowl until a soft dough forms, then beat vigorously 20 times. Press the dough into a pizza pan using your fingertips dipped in Bisquick, forming a 1/2-inch rim. Sprinkle 3/4 cup of cheese over the crust, followed by the chicken mixture, and finish by sprinkling the remaining 3/4 cup of cheese on top.
  • Bake for 12 to 15 minutes, or until the crust is golden brown and the cheese is irresistibly melted and bubbly.
