Fajita-Style Vegan Tofu Burrito

Delicious vegan burritos with seasoned veggies, tofu, and vegan sour cream.
Ingredients:
  • 2 tablespoons vegan margarine (such as Earth Balance®)
  • 0.5 yellow squash, thinly sliced
  • 0.5 green bell pepper, diced
  • 0.5 yellow onion, diced
  • 0.5 cup diced jalapeno peppers
  • 1 (12 ounce) package cubed tofu
  • 1 tablespoon garlic powder
  • 5 flour tortillas
  • 2 tablespoons vegan sour cream
Instructions:
  • In a large nonstick skillet over medium heat, melt margarine. Add squash, bell pepper, onion, and jalapeno. Cook to preferred doneness, 5 to 10 minutes. Stir in cubed tofu and heat for about 2 minutes. Mix in soy sauce and garlic powder; cook for an additional 5 minutes.
  • Place the tortillas in a damp paper towel and microwave on high for about 30 seconds until they are soft and warm.
  • Spread a delicate layer of vegan sour cream on each tortilla, then top with tofu and vegetable mixture before rolling up into a delicious burrito.
