Bisquick® mix transforms classic chicken pot pie into flavorful fajita-style dish with a cheesy biscuit topping and playful ketchup drizzle.
Ingredients:
  • 1 teaspoon vegetable oil
  • 1/2 medium bell pepper, cut into 1/2-inch strips
  • 2 cups cut-up cooked chicken
  • 1 3/4 cups thick & chunky salsa
  • 1/4 cup water
  • 1 cup Original Bisquick™ mix
  • 1/3 cup shredded Monterey Jack cheese
  • 1/2 cup milk
Instructions:
  • Preheat oven to 400°F. In a 10-inch skillet, heat oil over medium heat. Sauté bell pepper until crisp-tender. Add chicken, salsa, and water. Cook for 1 to 2 minutes until bubbly. Transfer mixture to an ungreased 1 1/2-quart casserole dish; set aside.
  • Combine the remaining ingredients in a small bowl and pour them over the chicken mixture, spreading almost to the edge of the casserole dish.
  • Bake uncovered for around 30 minutes until beautifully golden brown. Optionally, drizzle a message with squeezable ketchup.
