Maple balsamic dressing elevates fall salad with pecans, spinach, and apple.
Ingredients:
  • 1 (10 ounce) package baby spinach leaves
  • 1.25 cups diced apple
  • 1.25 cups diced sharp Cheddar cheese
  • 0.5 cup balsamic vinegar
  • 0.25 cup pure maple syrup
  • 1 teaspoon Dijon mustard
  • 0.75 cup extra-virgin olive oil
  • salt and ground black pepper to taste
Instructions:
  • In a large salad bowl, mix together the fresh spinach, crisp apple, sharp Cheddar cheese, sweet cranberries, and crunchy pecans. Toss until well combined.
  • In an electric blender, combine balsamic vinegar, maple syrup, and mustard. Blend on medium speed until well mixed. With the blender running, slowly add olive oil until fully incorporated. Season with salt and pepper to taste, and blend until creamy. Drizzle over salad and serve right away.
