Golden-crusted beef pie with flaky puff pastry and rich gravy, sure to delight the whole family.
Ingredients:
  • 1 small brown onion, chopped
  • 500g beef mince
  • 40.00 ml instant gravy powder
  • 45.20 gm barbecue sauce
  • 520.00 gm Fresh tomato sauce (see related recipe)
  • 250.00 ml carrot, roasted
  • 250.00 ml pumpkin, roasted
  • 250.00 ml potato, roasted, chopped
  • 40.00 ml chopped fresh parsley
  • 1 sheet frozen shortcrust pastry, partially thawed
  • 1 sheet frozen puff pastry, partially thawed
  • 1 egg, lightly beaten
Instructions:
  • In a large frying pan over medium-high heat, heat oil until shimmering. Add onion and cook, stirring occasionally, for 3 minutes until softened. Add mince and cook for 8 minutes, breaking it up, until browned.
  • Sprinkle in gravy powder and barbecue sauce, and cook for 1 minute. Stir in tomato sauce and simmer for 5 minutes. Remove from heat, season with pepper, then add carrot, pumpkin, potato, and parsley. Mix well, allow to cool.
  • Preheat oven to 200°C/180°C fan-forced while placing a baking tray inside. Grease a 24cm ovenproof pie dish, line it with shortcrust pastry, trimming as needed. Add a layer of baking paper and fill with ceramic weights or uncooked rice. Bake for 10 minutes, then remove weights and continue baking for 5 to 10 minutes until the pastry is golden. Allow to cool for 20 minutes.
  • Fill pastry case with mince mixture. Brush edge of pastry with egg. Cover with puff pastry, trim, and seal edge with a fork. Brush the top with egg. Make 2 small slits on the pie for steam to escape. Bake for 30-35 minutes until pastry is golden and puffed. Rest for 5 minutes before serving.
