Ingredients:
  • 5 large potatoes
  • 2 large free-range eggs
  • 2 large handfuls of baby spinach
  • 1 onion
  • 1 carrot
  • 250 ml double cream
  • mature Cheddar or Parmesan cheese
  • 1 lemon
  • 1 heaped teaspoon English mustard
  • 1 large handful of fresh flat-leaf parsley
  • 450 g haddock or cod fillet, skin off, pin-boned, from sustainable sources
  • 1 whole nutmeg for grating (optional)
Instructions:
  • Preheat the oven to 230°C/450°F/gas 8. Dice the potatoes into 2.5cm chunks and boil in salted water for 2 minutes. Add the eggs and cook for 8 minutes until hard-boiled. Steam the spinach for a minute, then drain and squeeze out excess moisture. Peel and quarter the eggs. In a separate pan, sauté onion and carrot, then add cream, cheese, lemon juice, mustard, and parsley. Slice the fish and place in a dish with spinach and eggs. Pour over the creamy vegetable sauce. Drain and mash the potatoes with oil, salt, pepper, and nutmeg. Spread on top of the fish mixture. Bake for 25-30 minutes until golden. Serve with peas, greens, baked beans, and ketchup.
