Savory chickpea flatbread made with spring onions, garlic, and gluten-free chickpea flour. Easy and tasty Italian dish.
Ingredients:
  • 4 tablespoons olive oil, divided
  • 1 tablespoon butter
  • 1 green onion, chopped
  • 1 clove garlic, minced
  • 1 cup chickpea flour
  • 1 cup lukewarm water
  • salt and freshly ground black pepper to taste
  • 1 pinch ground nutmeg
  • 2 tablespoons shredded Gruyere cheese
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C). Brush a 9-inch tart pan with 2 tablespoons of olive oil and place it in the oven to heat up.
  • In a medium skillet over medium heat, melt 1 tablespoon butter. Add green onion and garlic, cooking and stirring until softened, approximately for 5 minutes. Remove from heat.
  • Combine chickpea flour and lukewarm water until a smooth mixture forms. Let it rest at room temperature for 20 minutes.
  • Remove any foam from the surface of the chickpea-water mixture. Incorporate the remaining 2 tablespoons of olive oil and the onion-garlic mixture. Season with salt, pepper, and nutmeg, then add and stir in the Gruyere cheese. Take the tart tin out of the oven and pour in the chickpea mixture.
  • Bake in the preheated oven until golden and crispy, around 15 minutes. Slice into triangles before enjoying.
