Chef John's comforting garbanzo bean flatbread, baked to perfection and served in wedges.
Ingredients:
  • 2 cups lukewarm water
  • 1.5 cups garbanzo flour
  • 5 tablespoons olive oil, divided
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon minced fresh rosemary
  • freshly ground black pepper to taste
Instructions:
  • In a large bowl, combine lukewarm water and garbanzo flour, whisking vigorously until smooth. Cover the bowl with plastic wrap or a plate and allow it to rest at room temperature for 2 hours. Remove any foam that has formed on top of the batter. Whisk in 3 tablespoons of olive oil, kosher salt, and rosemary until thoroughly mixed.
  • Preheat the oven to a scorching 500 degrees F (260 degrees C).
  • Heat a smoking hot 10-inch cast iron skillet. Add remaining 2 tablespoons of olive oil, swirl to coat the bottom, and heat until the oil shimmers and a wisp of smoke rises.
  • Pour the batter into the hot oil and then transfer the skillet carefully to the preheated oven.
  • Bake the pancake in the preheated oven for 25 to 30 minutes until it's perfectly golden and crispy. Quickly transfer it to a plate, slice into wedges, and top with freshly ground black pepper before serving piping hot.
