Ghee: Nutty flavor, long shelf life, high smoke point, and great for lactose intolerant folks.
Ingredients:
  • 1 pound organic unsalted butter
Instructions:
  • Cut the butter into smaller pieces and place them in a saucepan over medium-low heat. Allow the butter to melt without stirring, ensuring to keep a watchful eye on it.
  • Remove the foam: After melting the butter and as the milk solids cook, allow the white foam to gradually rise to the surface over the next 5-8 minutes. Gently skim off the foam using a large spoon, being careful not to touch the bottom of the pan. Discard the foam as needed.
  • Watch for the second foam and then remove from heat: Once you have skimmed off most of the foam from the melted butter, you will notice a clear liquid with golden browned milk solids at the bottom of the pan. After about 30 seconds, a light foam will reappear on the surface of the ghee, resembling a thin cloud of small, clear bubbles. When this second foam forms, turn off the heat immediately. Remove the ghee from the heat and allow it to rest for 10 minutes.
  • Strain the ghee: Set up a fine mesh sieve lined with cheesecloth over a mason jar. Pour the ghee through the sieve into the jar. Allow the ghee to cool completely before sealing the jar. Store at room temperature in a dry place. For firmer consistency in warm kitchens, refrigerate.
