Farmers’ Market Grilled Succotash

Grill fresh farmers market veggies for delicious sweet and smoky flavor. Prep a big batch for quick and easy meals all week.
Ingredients:
  • 2 ears fresh sweet corn, husks removed
  • 2 zucchini, cut lengthwise in half
  • 1/2 sweet onion
  • 1 cup cherry or pear tomatoes
  • 3 slices bacon
  • 1 tablespoon butter
  • 2 cloves garlic, finely chopped
  • 2 teaspoons chopped fresh basil leaves
  • 1 teaspoon chopped fresh thyme leaves
  • Salt and pepper
Instructions:
  • Preheat gas or charcoal grill. Put corn, zucchini, onion, and tomatoes in a grill basket or directly on the grill rack over medium heat. Grill with the lid on for 10 to 15 minutes, flipping occasionally, until they have a slight char and are crispy-tender. Take the vegetables off the grill and let them cool.
  • Cook bacon in a 10-inch skillet until crisp. Drain on paper towels, reserving 1 tablespoon of the drippings in the skillet. Crumble the bacon and set aside.
  • Prepare the vegetables: cut the corn off the cobs, chop the zucchini and onion, and halve the tomatoes. In a skillet with bacon drippings, add butter and garlic, then cook and stir for 1 minute over medium-high heat. Add the grilled vegetables and bacon, cook for 3 to 4 minutes until heated through, stirring occasionally. Sprinkle with basil and thyme, and season with salt and pepper to taste.
