Grilled farmers' market veggie salad fit for a king!
Ingredients:
  • 1/3 cup Caesar dressing
  • 1/4 cup chopped fresh parsley
  • 4 large fresh portabella mushrooms, cut into fourths
  • 4 medium yellow summer squash, cut into 1/2-inch slices
  • 2 medium bell peppers, cut into 1/2-inch strips
  • 3 tablespoons olive or vegetable oil
  • 1 cup cherry tomatoes, cut into fourths
  • 1/3 cup shredded Parmesan cheese
Instructions:
  • Prepare your grill with hot coals or heat up your gas grill for direct heat. Combine the dressing and parsley together and set aside.
  • Coat mushrooms, yellow squash, and bell peppers with oil. Grill the vegetables in a grill basket or directly on the grill rack, covered, over medium heat for 5 to 7 minutes, turning occasionally, until they are crisp-tender.
  • Arrange the mushrooms around the edge of the platter, place the remaining grilled vegetables in the center, sprinkle with tomatoes, drizzle dressing over the vegetables, sprinkle with cheese, and serve at room temperature.
