Grilled veggie salad with flavorful Caesar dressing, ready in 25 minutes - ideal for dinner.
Ingredients:
  • 1/4 cup fat-free or reduced-fat Caesar dressing
  • 1/4 cup chopped fresh parsley
  • 4 large portabella mushrooms, cut into fourths
  • 4 medium yellow summer squash, cut into 1/2-inch slices
  • 2 medium bell peppers (any color), cut into 1/2-inch strips
  • 1 tablespoon olive or canola oil
  • 1 cup cherry tomatoes, cut into fourths
  • 2 tablespoons shredded Parmesan cheese
Instructions:
  • Prepare the grill for direct heat by heating coals or turning on the gas grill.
  • Combine the dressing and parsley in a small bowl; set aside. Brush oil onto the mushrooms, summer squash, and bell peppers.
  • Grill mushrooms, summer squash, and bell peppers in a grill basket or directly on the grill rack over medium heat for 5 to 7 minutes. Remember to shake the basket or stir and turn the vegetables occasionally until they are crisp-tender.
  • To present, place mushrooms around the platter's edge and the rest of the grilled vegetables in the center. Scatter tomatoes on top, then drizzle with dressing and sprinkle with cheese. Serve at room temperature.
