Caesar on the lighter side

Elevated Caesar salad with a healthier, flavorful twist on the classic dressing.
Ingredients:
  • 1 cos lettuce or romaine
  • 1 clove of garlic
  • 2 tablespoons olive oil
  • ½ a lemon
  • 30 g Parmesan cheese plus extra to serve
  • 2 teaspoons Worcestershire sauce
  • 75 g low-fat natural yoghurt
  • 2 anchovy fillets in olive oil
Instructions:
  • Remove any wilting or dark outer lettuce leaves, trim and quarter the head lengthwise, remove the core, wash, and dry. Peel and finely chop garlic, mix with olive oil in a bowl. Grate in Parmesan, squeeze lemon juice, add Worcestershire sauce, yogurt, and whisk. Roughly chop and add anchovies, season, and whisk. Toss lettuce with dressing, transfer to a serving bowl, grate more Parmesan, and serve.
