Brussels sprouts Caesar-style

Transform Brussels sprouts with tangy Caesar dressing and garlic croutons in this irresistible salad recipe.
Ingredients:
  • 50 g Parmesan cheese plus extra to serve
  • 1 lemon
  • 3 tablespoons Greek-style yoghurt
  • 1 small handful of soft herbs such as basil, flat-leaf parsley, dill
  • ½ teaspoon Worcestershire sauce
  • extra virgin olive oil
  • 3 anchovies in oil (optional)
  • 500 g Brussels sprouts
  • 2 thick slices of stale bread
  • 1 clove of garlic
  • olive oil
Instructions:
  • Grate most of the Parmesan into a blender along with the zest of half a lemon. Add the juice of the whole lemon, yoghurt, herbs, Worcestershire sauce, 2 tablespoons of extra virgin olive oil, and anchovies if using. Blend until smooth and transfer to a large serving dish. Cut half of the sprouts in half through the root, char in a dry frying pan until browned. Thinly slice the remaining sprouts and layer over the sauce. Top with the charred Brussels sprouts. Toast bread chunks in the same pan, create a well in the center, add grated garlic and a drizzle of olive oil. Sprinkle on remaining Parmesan, drizzle more olive oil, melt the cheese. Add cheesy croutons to the salad, toss well. Finish with Parmesan shavings and serve.
