Whisk up a homemade Caesar dressing for a crisp shaved Brussels sprouts salad topped with crunchy breadcrumbs. Speed up prep by using store-bought shredded Brussels. Perfect for chilly days!
Ingredients:
  • For the breadcrumbs
  • 2 tablespoons unsalted butter
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon fresh lemon zest
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • For the salad
  • 2 pounds Brussels sprouts (see Recipe Note)
  • 2 tablespoons roughly chopped flat parsley leaves
  • 2 tablespoon olive oil
  • 2 tablespoons finely grated Parmesan cheese, plus more for serving
  • 2 tablespoons fresh lemon juice
  • For the dressing
  • 1/3 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, grated
  • 2 teaspoons Worcestershire sauce
  • 1/2 cup finely grated Parmesan cheese
Instructions:
  • Toast the breadcrumbs: Melt butter in a large frying pan over medium heat. Cook breadcrumbs, stirring often, until deep golden brown, about 5 minutes. Remove from pan and mix in lemon zest, salt, and black pepper. Keep aside.
  • Prepare the Brussels sprouts: Cut the Brussels sprouts in half through the stem end and thinly slice them into 1/8-inch ribbons, discarding the stem ends. Transfer the ribbons to a large bowl. Mix in the parsley and olive oil until coated. Add the Parmesan and toss to coat. Finish with the lemon juice, give it a final toss, and set aside for dressing preparation.
  • Prepare the dressing by combining mayonnaise, Dijon mustard, garlic, lemon juice, Worcestershire sauce, and Parmesan in a small bowl. Whisk until well combined. Gradually stream in olive oil while whisking until the dressing reaches a thick but pourable consistency. If it's too thick, gently add more olive oil, a tablespoon at a time, until it can be drizzled.
  • To serve, combine Brussels sprouts with dressing. Optionally, transfer to a plate or bowl and sprinkle with lemony breadcrumbs. Store salad in the fridge for up to a day. Note: Breadcrumbs may soften but remain tasty. Feel free to rate the recipe below!
