Brussels sprouts roasted in creamy paprika and lemon sauce for a tangy, smoky Caesar-inspired side dish.
Ingredients:
  • 2 (16 ounce) packages Brussels sprouts
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 0.25 teaspoon sea salt
  • 0.25 cup heavy whipping cream
  • 3 tablespoons grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon brown mustard
Instructions:
  • Preheat the oven to a piping hot 425 degrees F (220 degrees C).
  • Prepare the Brussels sprouts by removing the stems, cutting large ones into quarters lengthwise, and halving small ones. Make sure to rinse them well and pat dry completely.
  • Coat sprouts in a bowl with olive oil and paprika, then lay them out on a baking sheet and season with sea salt.
  • Place in the warm oven for 20 minutes, discarding any loose leaves after 5 minutes and gently flipping the whole sprouts every 5 minutes.
  • Create a flavorful dressing by combining heavy cream, Parmesan cheese, olive oil, lemon zest and juice, red wine vinegar, garlic, brown mustard, and paprika in a bowl. Whisk until thoroughly mixed.
  • Combine the whole sprouts and loose leaves in a serving bowl, then drizzle the dressing over them and toss to mix.
