Start your day with spicy kidney beans in tomato sauce, onion, and jalapeño. Enjoy with pita bread!
Ingredients:
3tablespoons olive oil
1 large onion, chopped
1jalapeno pepper, finely chopped, or more to taste
1tomato, chopped
2teaspoons tomato paste
2 (15 ounce) cansdark red kidney beans, undrained
1.5 teaspoons ground cumin
1.5 teaspoons curry powder
salt and black pepper to taste
Instructions:
In a large skillet, heat oil over medium heat. Cook onion, stirring occasionally, until translucent, about 5 minutes.
Add the jalapeño pepper and sauté until softened, around 5 minutes.
Combine juicy tomatoes and flavorful tomato paste, stirring vigorously to blend them together. Add in the kidney beans with their savory liquid, then mix in the aromatic cumin and exotic curry powder. Bring the mixture to a boil, then lower the heat to a gentle simmer until the beans are heated through and the sauce has thickened, approximately 15 minutes.
