Make a quick, homemade soup any night with my simple recipe.
Ingredients:
  • 2 quarts chicken broth
  • 1 quart water
  • 1 store-bought roast chicken
  • 3 tablespoons vegetable oil
  • 2 large onions, cut into medium dice
  • 2 large carrots, peeled and cut into rounds or half rounds, depending on size
  • 2 large stalks celery, sliced 1/4 inch thick
  • 1 teaspoon dried thyme leaves
Instructions:
  • In a large soup kettle, bring broth and water to a gentle simmer over medium-high heat. While simmering, separate chicken meat from skin and bones, setting aside the meat. Add the skin and bones to the simmering broth. Reduce heat, partially cover, and let simmer for 20 to 30 minutes until the bones release their flavors.
  • Pour the flavorful broth through a colander into a large container. Keep the delicious broth aside and dispose of the unwanted skin and bones. Put the kettle back on the stove over medium-high heat to continue cooking.
  • Heat olive oil in a skillet over medium heat. Cook onions, carrots, and celery until softened, about 8-10 minutes. Add chicken, broth, and thyme and bring to a gentle simmer. (Can be made ahead and refrigerated for up to 3 days. Reheat to a simmer before adding any additional ingredients.)
