Make delicious Asian-inspired chicken soup at home with ease!
Ingredients:
  • 60.00 ml (1/4 cup) tom yum paste (see note)
  • 1L (4 cups) chicken style liquid stock
  • 32.00 gm brown sugar
  • 500g chicken breast fillets
  • 425g can straw mushrooms, drained (see note)
  • 125ml lemon juice
  • 500.00 ml bean sprouts
  • 3 spring onions, roughly chopped
Instructions:
  • Heat a large saucepan over medium heat. Add the tom yum paste and cook for 2 minutes until fragrant.
  • Combine 1L (4 cups) water, chicken stock, sugar, and chicken fillets in a pot. Bring to a boil, then simmer over medium-low heat for 10 minutes. Just before serving, add mushrooms and heat for another minute.
  • Shred the chicken using two forks and return it to the soup. Remove the saucepan from the heat and stir in the lemon juice.
  • To present, pour the soup into bowls and garnish with bean sprouts and chopped spring onion.
