Hot and Sour Chicken Soup

Easy and quick hot and sour chicken soup approved by a top chef - the perfect comforting meal in just 30 minutes!
Ingredients:
  • 0.5 cup water
  • 2 cups sliced fresh mushrooms
  • 0.5 cup sliced bamboo shoots, drained
  • 3 slices fresh ginger root
  • 2 cloves garlic, crushed
  • 2 teaspoons soy sauce
  • 0.25 teaspoon red pepper flakes
  • 1 pound skinless, boneless chicken breast halves - cut into thin strips
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • 0.25 cup chopped fresh cilantro
  • 3 tablespoons red wine vinegar
  • 2 tablespoons cornstarch
  • 1 egg, beaten
Instructions:
  • Combine chicken broth, water, mushrooms, bamboo shoots, ginger, garlic, soy sauce, and hot pepper flakes in a saucepan. Bring to a boil, then simmer covered on low heat as you prepare the remaining ingredients.
  • Coat the chicken slices with sesame oil in a bowl. In another bowl, combine cornstarch and vinegar, and set aside.
  • Turn up the heat to medium-high and bring the broth to a rolling boil. Add the chicken slices and bring back to a boil. Slowly stir in the egg to create long strands of egg. Mix in the vinegar and cornstarch. Simmer on medium heat, stirring occasionally, until chicken is fully cooked and the broth slightly thickens, about 3 minutes. Serve with a garnish of green onions and cilantro.
