In a serving bowl, mix together the onion, remaining oil, and remaining sumac. Season with salt and pepper. Cover with plastic wrap and let it sit for 30 minutes to enhance the flavors.
Tear pita bread into bite-sized pieces. Combine torn pita bread with tomato, cucumber, mint, and parsley in the onion mixture, gently toss together. Serve promptly.
