Elevate this Lebanese bread salad with fragrant herbs and spices.
Ingredients:
  • 3 small pita breads, halved
  • 120ml (6 tbsp) olive oil
  • 40.00 ml chopped flat-leaf parsley
  • 40.00 ml chopped coriander leaves
  • 40.00 ml chopped, fresh mint leaves
  • 1 red onion, sliced
  • 5 tomatoes, seeded, cut into 1-2cm dice
  • 1 telegraph cucumber, peeled, seeded, diced into 1-2cm cubes
  • 2 small green capsicums, seeded, diced into 1-2cm cubes
Instructions:
  • Preheat your oven to 190°C.
  • Drizzle bread pieces with 2 tablespoons of oil, ensuring they are evenly coated. Arrange on a baking tray and bake for 10-15 minutes until golden and crispy. Remove from the oven and transfer to a paper towel-lined plate to drain and cool.
  • In a large bowl, mix garlic, lemon juice, remaining olive oil, and herbs, then season with salt and pepper. Add onion, tomato, cucumber, and capsicum, combine. Right before serving, break bread into pieces, add to the salad, and toss. Enjoy with grilled meat or fish.
