Fattoush salad

Fattoush: Refreshing Middle-Eastern salad.
Ingredients:
  • 2 wholemeal pocket pita bread
  • 60ml olive oil
  • 6.00 gm sesame seeds
  • 6.00 gm black sesame seeds
  • Sea salt flakes
  • 2 Lebanese cucumbers
  • 200g punnet grape tomatoes
  • 2 radishes, trimmed, thinly sliced
  • 250.00 ml mint leaves
  • 125.00 ml flat-leaf parsley
  • Sumac, to sprinkle
Instructions:
  • Preheat the oven to 200°C. Place pita bread on an oven tray, brush with 1 tablespoon of oil on both sides, sprinkle with sesame seeds and salt flakes. Bake for 5-7 minutes or until golden and crisp, turning once. Allow to cool, then break into large pieces.
  • Cut the cucumbers into ribbons using a vegetable peeler. Place the cucumber, tomatoes, radish, mint, parsley, and pita on a large serving platter. Mix the lemon juice and remaining oil in a small jug. Season with salt and pepper, then drizzle over the salad and sprinkle with sumac. Serve right away.
