Grilled haloumi adds protein to this Lebanese salad.
Ingredients:
  • 1 large green capsicum, finely chopped
  • 1 Lebanese cucumber, finely chopped
  • 2 ripe truss tomatoes, finely chopped
  • 1/2 red onion, finely chopped
  • 1/2 bunch fresh continental parsley, leaves chopped
  • 1/2 bunch fresh coriander, leaves chopped
  • 2 pita bread
  • 250g haloumi, sliced
  • Lemon juice, to serve
  • 60ml (1/4 cup) extra virgin olive oil
  • 42.00 gm lemon juice
  • 1 small garlic clove, crushed
  • 2.50 gm caster sugar
Instructions:
  • In a large bowl, mix together capsicum, cucumber, tomato, onion, and herbs. Grill the bread on medium-high heat until toasted and crisp, about 1-2 minutes. Allow to cool slightly, then tear into bite-sized pieces and add to the salad.
  • To make the dressing, mix all ingredients in a small bowl, season to taste, then drizzle it over the salad. Toss everything together thoroughly and serve the salad on individual plates.
  • Preheat a non-stick frying pan over medium-high heat. Sear the haloumi for 2 minutes, flipping once, until golden brown. Place on top of the salad and finish with a light drizzle of extra lemon juice before serving.
