Sumptuous Middle Eastern salad with fresh veggies, herbs, and zesty citrus dressing. Toss in toasted pita for a satisfying crunch.
Ingredients:
  • 3/4 cup lemon juice
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup diced unpeeled English (seedless) cucumber
  • 3 plum (Roma) tomatoes, diced (1 3/4 cups)
  • 1/2 red bell pepper, diced (1/2 cup)
  • 3 cups thinly sliced red cabbage
  • 1/2 cup chopped fresh Italian (flat-leaf) parsley
  • 1/4 cup chopped fresh mint leaves
  • 2 pita rounds, toasted and torn into 1-inch chunks
Instructions:
  • In a large bowl, whisk together the zesty lemon juice, aromatic oil, savory salt, bold pepper, and fragrant garlic. Add all remaining ingredients, except the pita, and mix thoroughly to meld all the flavors together.
  • Divide the mixture evenly among 4 serving plates and generously garnish each with crispy pita pieces.
