Grilled lamb chops with fattoush

Marinated lamb chops with crisp Arabian salad - a delightful combination.
Ingredients:
  • 4 x 100 g lamb chops
  • olive oil
  • 2 wholemeal pitta breads
  • 1 sweet crunch lettuce
  • 40 g rocket
  • ½ a bunch of fresh mint
  • ½ a cucumber
  • 3 ripe tomatoes
  • 1 lemon
  • extra virgin olive oil
  • ½ teaspoon paprika or sumac
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. Remove excess fat from the lamb chops, coat with olive oil, season with salt and pepper. Tear pitta breads into small pieces and bake until golden and crisp, about 10-12 minutes. Mix sweet crunch lettuce, rocket, chopped cucumber, and tomatoes in a bowl. Grill lamb chops for 3 minutes on each side. Combine pitta pieces with salad, mint leaves, lemon juice, olive oil, salt, and pepper. Serve with paprika sprinkled on top and lamb chops drizzled with resting juices.
