Enhance lamb chops with mint sauce and fresh seasonal veggies for superior flavor.
Ingredients:
  • 4 (about 110g each and 2.5cm thick) lamb loin chops
  • 2 (about 150g each) desiree potatoes, unpeeled, quartered
  • 2 (about 200g) carrots, peeled, diagonally sliced
  • 120g (3/4 cup) frozen or fresh peas
  • 40.00 gm caster sugar
  • 40.00 gm water
  • 20.00 ml finely chopped fresh mint
  • 2 tsp malt vinegar
Instructions:
  • In a small saucepan, combine sugar and water over low heat until sugar dissolves. Increase heat, bring to a boil, then simmer uncovered for 2 minutes until slightly thickened. Let cool for 20 minutes, then stir in mint and vinegar.
  • Before preheating the grill on high, remember to remove the grill tray to prevent it from getting hot and the chops from sticking. Then, place the chops on the grill tray under the preheated grill, ensuring the tray is about 5cm from the heat source. Cook each side for 4 1/2 minutes for medium doneness. Once done, transfer to a plate, lightly cover with foil, and let it rest for 5 minutes before serving.
  • Place potatoes in boiling water and cook, covered, for 12 minutes until tender. Add carrots for the last 4 minutes and peas for the last minute of cooking.
  • Separate the vegetables onto serving plates. Top with the lamb chops and generously drizzle with the mint sauce.
