Enhance grilled lamb chops with a burst of flavor and vibrant colors from various fresh herbs.
Ingredients:
  • 8 (5 ounce) lamb loin chops, about 1 1/4-inches thick
  • 1 teaspoon seasoning salt
  • 0.5 tablespoon minced fresh parsley
  • 0.5 tablespoon minced fresh rosemary
  • 0.5 tablespoon minced fresh chives
Instructions:
  • Trim the excess fat from each lamb chop to 1/8-inch and generously season both sides with seasoning salt. Allow the lamb chops to rest for approximately 30 minutes until they reach room temperature.
  • Heat your outdoor grill to 400°F (200°C) and lightly oil the grate.
  • Grill lamb chops over high heat for 2 to 3 minutes, rotate to create grill marks, grill for another 2 to 3 minutes. Flip and grill for 2 to 3 minutes, then rotate and grill for 2 more minutes until desired doneness reaches at least 130°F (54°C) measured by an instant-read thermometer.
  • Take the chops off the grill and generously garnish them with fragrant fresh herbs. Cover with foil and let them rest for approximately 10 minutes.
