Try flavorful spiced cauliflower steak with a delectable Middle Eastern fattoush salad. Perfect for vegetarians!
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 42.00 gm lemon juice
  • 7.50 gm mild paprika
  • 2 small cauliflowers, cut into 2cm slices lengthways
  • 120g pkt toasted pita bread
  • 3 vine-ripened tomatoes, cut into wedges
  • 1 Lebanese cucumber, chopped
  • 1 green capsicum, chopped
  • 1 small red onion, cut into thin wedges
  • 250.00 ml flat-leaf parsley leaves
  • 250.00 ml mint leaves
  • 42.00 gm lemon juice, extra
  • 36.40 gm extra virgin olive oil, extra
Instructions:
  • In a bowl, mix oil, lemon juice, and paprika. Add cauliflower and coat evenly. Heat a large frying pan over medium heat. Cook cauliflower in 2 batches for 5 minutes each side until golden and tender.
  • In a large bowl, combine bread, tomato, cucumber, capsicum, onion, parsley, mint, extra juice, and extra oil. Season well and toss until mixed.
  • Plate the cauliflower steaks alongside a fresh salad.
