Gluten-Free Roasted Cauliflower Steaks with Curried Bean Puree

Mouthwatering cauliflower steaks - a perfect dish for vegetarian and vegan guests!
Ingredients:
  • 1 large head cauliflower
  • 2 tablespoons olive oil
  • 1/2 teaspoon gluten-free curry powder
  • 1 can gluten-free, reduced sodium white beans, drained, rinsed
  • 2 tablespoons lemon juice
  • 1/4 cup packed cilantro leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic
  • 1/4 cup unsalted vegetable broth
  • Sliced green onions
Instructions:
  • Preheat oven to 400°F and lightly coat a cookie sheet with cooking spray.
  • Prepare cauliflower steaks by removing tough leaves, keeping stem intact. Cut cauliflower vertically into 1-inch pieces to yield 4 steaks; place on a baking sheet. Brush steaks with oil, sprinkle 1/4 teaspoon curry powder, bake for 15 minutes.
  • Prepare the Curried White Bean Puree by combining all ingredients in a food processor. Blend until smooth, scraping down the sides as needed. Transfer the puree to a 1-quart saucepan and warm over low heat, stirring occasionally.
  • After 15 minutes, delicately flip cauliflower steaks. Coat the second side with oil and sprinkle with the remaining 1/4 teaspoon of curry powder. Bake for approximately 15 more minutes until the florets are golden brown.
  • Spread the puree evenly on 4 serving plates, making sure it peeks out from under the steak. Place a cauliflower steak on each plate and garnish with sliced green onions.
