Make a gluten-free cheesesteak using roasted cauliflower "steaks" instead of bread.
Ingredients:
  • 1 small head cauliflower
  • 0.25 cup olive oil
  • 0.5 stick unsalted butter
  • ground black pepper to taste
  • 2 slices Gouda cheese
  • 2 slices sharp Cheddar cheese
  • 2 slices beefsteak tomato
Instructions:
  • Preheat your oven to a toasty 425°F (220°C) and cover a baking sheet with parchment paper for easy cleanup.
  • Prepare the cauliflower by removing the tough bottom leaves without detaching the stem. Place it on a cutting board with the stem facing up, then cut vertical slices on both sides of the stem to release the loose florets. Save the florets for later. Slice the cauliflower into 2 even "steaks" that are around 1 inch thick by cutting vertically through the stem. Place them on the baking sheet.
  • Roast cauliflower in the oven until golden and tender, for approximately 15 minutes.
  • In a large frying pan, heat olive oil and butter until sizzling. Cook cauliflower until golden brown on one side, approximately 2 to 3 minutes. Flip cauliflower and move to one side of the pan to melt cheese slices.
  • Place cheese slices in the pan until they start to melt, then layer them over the cauliflower steaks. Heat tomato slices the same way. Season with black pepper, then top the cheeses and tomatoes with the remaining steak. Flip the "sandwich" and cook over low heat until cheeses are melted, for an additional 2 to 3 minutes.
