Cauliflower Steaks with Gremolata

Delicious cauliflower steaks with flavorful gremolata make a perfect side dish.
Ingredients:
  • cooking spray
  • 1 (1.5 pound) head cauliflower
  • 2 tablespoons water
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 0.125 teaspoon salt
Instructions:
  • Cut cauliflower head into thick steaks. Heat a large skillet over medium-high heat and coat with cooking spray. Cook cauliflower in batches until golden and slightly charred, about 5 minutes. Flip, add water, cover, and cook until tender, 5 to 7 minutes. Season with salt and pepper.
  • Mix parsley, olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper for gremolata. Enjoy with steaks.
