Mouthwatering Mediterranean panzanella with zesty tomato, cool cucumber, crunchy bread, and sweet vinaigrette.
Ingredients:
4 large ripe tomatoes, diced
2Lebanese cucumbers, diced
4radishes, cut into thin strips
1 small red onion, finely chopped
62.50 ml small mint leaves
62.50 ml small flat-leaf parsley leaves
62.50 ml small coriander leaves
2long piecespane croccante (see notes)
36.40 gm extra virgin olive oil
21.00 gm lime juice
2 tsp pomegranate molasses or raspberry vinegar (see notes)
Instructions:
In a large bowl, mix together tomato, cucumber, radish, onion, mint, parsley, and coriander. Refrigerate until ready to use.
Break the bread into bite-sized pieces and arrange them in a large serving dish. Just before serving, gently spoon the salad over the bread. Finish by generously drizzling the dressing over the salad and serve immediately.
In a jug, vigorously whisk together olive oil, lime juice, and pomegranate molasses until emulsified. Season with salt and pepper to taste.
