Mouthwatering Mediterranean panzanella with zesty tomato, cool cucumber, crunchy bread, and sweet vinaigrette.
Ingredients:
  • 4 large ripe tomatoes, diced
  • 2 Lebanese cucumbers, diced
  • 4 radishes, cut into thin strips
  • 1 small red onion, finely chopped
  • 62.50 ml small mint leaves
  • 62.50 ml small flat-leaf parsley leaves
  • 62.50 ml small coriander leaves
  • 2 long pieces pane croccante (see notes)
  • 36.40 gm extra virgin olive oil
  • 21.00 gm lime juice
  • 2 tsp pomegranate molasses or raspberry vinegar (see notes)
Instructions:
  • In a large bowl, mix together tomato, cucumber, radish, onion, mint, parsley, and coriander. Refrigerate until ready to use.
  • Break the bread into bite-sized pieces and arrange them in a large serving dish. Just before serving, gently spoon the salad over the bread. Finish by generously drizzling the dressing over the salad and serve immediately.
  • In a jug, vigorously whisk together olive oil, lime juice, and pomegranate molasses until emulsified. Season with salt and pepper to taste.
