Luscious Fava Bean Dip with zesty garlic, tangy lemon, creamy goat cheese, and olive oil. Perfect with crisp jicama or cucumber.
Ingredients:
  • 2-3 pounds fresh fava (broad) beans, shelled (about 2 cups)
  • 1 tablespoon salt
  • 1/2 cup chopped green garlic (can substitute 4 cloves chopped garlic)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1/4 cup or more water
  • 5 ounces goat cheese
  • Kosher salt and freshly ground pepper
Instructions:
  • Shell the fava beans by bending the pod near one of the beans and squeezing it to release the bean into a large bowl. Repeat with all the pods until all the beans are removed.
  • Cook the beans in seasoned boiling water: In a pot, bring 2 quarts of water to a boil and add 1 tablespoon of salt. Add the shelled beans and simmer for 5 minutes. Use a slotted spoon to transfer the beans to a bowl of ice water to preserve their vibrant green color.
  • Peel the beans after they have sunk to the bottom of the bowl of ice water, then discard the outer skins.
  • In a small skillet over medium heat, sauté the chopped green garlic or regular garlic cloves in 1 tablespoon of olive oil until softened but not browned, for about 3-4 minutes.
  • Blend shelled beans in a food processor with green garlic, lemon zest, lemon juice, and water until smooth. Gradually add a little more olive oil while blending.
  • Incorporate goat cheese: Transfer the mixture from the food processor to a bowl. Blend in the goat cheese thoroughly. Season with kosher salt and fresh ground pepper. Enjoy with sliced cucumbers or jicama.
