Fava Bean Rounds (Falafel)

Crispy fava bean rounds seasoned to perfection, ideal as a snack or in pita sandwiches.
Ingredients:
  • 2 cups water
  • 1 cup dried white fava or garbanzo beans
  • 1 egg
  • 1 small red onion, finely chopped
  • 3 tablespoons chopped fresh parsley
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 2 teaspoons finely chopped garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • 3/4 teaspoon ground cumin
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon ground ground red pepper (cayenne)
  • Vegetable oil
Instructions:
  • Bring 2 cups of water and beans to a boil in a 2-quart saucepan. Boil for 2 minutes, then remove from heat, cover, and let sit for 1 hour.
  • If needed, cover beans with water. Bring to a boil, then reduce the heat. Simmer covered for 1 to 1/2 hours until tender. Drain beans, but save the liquid.
  • Gently mash beans with a fork, adding 2 to 3 tablespoons of reserved liquid as needed. Do not blend in a blender or food processor. Stir in all remaining ingredients except oil until a thick mixture forms. Cover and let it sit for 1 hour.
  • Shape the 1-inch pieces into rounds, gently flatten them, and allow them to rest for 30 minutes.
  • Heat a generous amount of oil in a medium saucepan until it reaches a temperature of 375°F. Fry a small batch of rounds for 2 to 3 minutes, flipping once, until they are beautifully golden. Remove using a slotted spoon and place on paper towels to drain.
