Mouthwatering strawberry rhubarb pie with a simple ingredient list: pie crust, fresh strawberries, tart rhubarb, sweet sugar, tapioca, and zesty lemon juice.
Ingredients:
  • 3 cups sliced strawberries
  • 3 cups sliced rhubarb
  • 1.5 cups white sugar
  • 0.25 cup instant tapioca
  • 1 squeeze fresh lemon juice
  • double-crust pie pastry, thawed
  • 2 tablespoons butter, cut into small pieces
Instructions:
  • Preheat the oven to 400°F (200°C) and set a pie dish on a baking sheet.
  • Combine the vibrant strawberries, tart rhubarb, sweet sugar, tapioca, and zesty lemon juice in a bowl. Allow the flavors to marry for 15 minutes, giving it an occasional stir.
  • Place the pie crust into a 9-inch pie dish. Pour the filling into the bottom crust. Sprinkle butter pieces over the filling. Cover with the top crust and press the edges together, crimping with a fork to seal. Using a sharp knife, cut several slits in the top crust.
  • Bake in the oven until the crust turns a beautiful golden brown and the filling is bubbling, usually 40 to 55 minutes.
