Strawberry Rhubarb Jam with Jell-O

Easy strawberry rhubarb jam made with Jell-O and fresh rhubarb - a new favorite jam recipe!
Ingredients:
  • 5 cups chopped fresh rhubarb
  • 3 cups white sugar
  • 1 (3 ounce) package strawberry flavored Jell-O®
Instructions:
  • Combine the fresh rhubarb and sugar in a large saucepan or stockpot. Cover and allow to rest overnight for the flavors to develop.
  • In a saucepan, combine rhubarb and sugar, and bring to a gentle boil over medium heat. Cook, stirring constantly, for 12 minutes on low heat. Remove from heat, then mix in dry gelatin. Transfer the mixture to clean jars, and chill in the refrigerator.
