Fennel, apple and walnut salad with dill mayonnaise

Elevate the classic Waldorf salad with a refreshing fennel and apple twist. Sponsored by S&W.
Ingredients:
  • 123.75 gm Whole Egg Mayonnaise
  • 41.20 gm milk
  • 20.00 ml finely snipped fresh dill
  • 2 tsp capers, roughly chopped
  • 1/2 tsp finely grated lemon rind
  • sea salt and freshly ground pepper, to taste
  • 2 medium fennel bulbs, thinly sliced
  • 2 green apples, cored and thinly sliced
  • 8 radishes, thinly sliced
  • 50g walnuts, toasted and roughly chopped
Instructions:
  • Combine S&W Whole Egg Mayonnaise, milk, dill, capers, and lemon rind in a large bowl, whisk until well mixed, and season to taste.
  • Combine the fennel, apple, and radish with the mayonnaise and mix until everything is well coated.
  • Present the dish on a serving platter and generously sprinkle with walnuts before serving promptly.
