Summer crunch salad with walnuts and Gorgonzola

Gorgonzola pairs perfectly with crisp apple and fresh peas for a zesty and delightful dish.
Ingredients:
  • 1 lemon juice of
  • 2 small red apples
  • 2 bulbs fennel thinly sliced, leafy tops reserved
  • 2 handfuls walnut halves
  • 200 g Gorgonzola cheese
  • 3 large handfuls fresh peas
Instructions:
  • Extract the lemon juice into a mixing bowl, filtering out the seeds as you go. Pour triple the amount of olive oil into the lemon juice and season generously with sea salt and freshly ground black pepper. Whisk thoroughly. Core and thinly slice the apples. Combine with fennel and walnuts in the dressing and distribute into individual bowls. Crumble Gorgonzola on top, then garnish with fresh peas and fennel tops before serving.
