Delicious blend of crunchy walnuts and creamy cheese for a perfect balance of flavors and textures.
Ingredients:
  • 3 slices prosciutto
  • 27.30 gm extra virgin olive oil
  • 20.00 ml red wine vinegar
  • 165.00 ml fresh basil leaves
  • 2 small (about 320g) single smoked chicken breasts, skin removed, coarsely shredded
  • 600g Thompson seedless grapes
  • 125.00 ml pale celery leaves
  • 55g (1/2 cup) walnut halves, coarsely chopped
  • 60g blue cheese, crumbled
Instructions:
  • Preheat the grill on high. Arrange the prosciutto in a single layer on a baking tray. Grill for 3 minutes until crispy around the edges. Let it cool slightly on the tray.
  • Combine the oil and vinegar in a small bowl, whisk until well mixed. Tear the prosciutto and large basil leaves.
  • Combine chicken, grapes, celery leaves, walnuts, blue cheese, basil, and prosciutto in a large bowl. Toss with three-quarters of the dressing and season with salt and pepper. Divide onto plates and drizzle with the remaining dressing before serving.
