Gourmet beef salad with crunchy walnuts and flavorful blue cheese.
Ingredients:
  • 25g (5 tsp) butter
  • 4 (about 125g each and 2cm thick) beef rib eye steaks
  • 36.40 gm olive oil
  • 45g (1/3 cup) walnuts pieces
  • 2 witlof, leaves separated
  • Freshly ground black pepper
  • 1 150g pkt Blue cheese, roughly crumbled
  • 1 bunch chives, snipped into 2cm lengths
Instructions:
  • In a sizzling pan over medium-high heat, melt the butter until it starts to foam. Place the beef in the pan and sear for 4 minutes on each side for a perfect medium-rare, or adjust the time to your desired doneness. Remove the beef from the pan and tent it with foil on a plate. Set it aside to rest while you easily wipe the pan clean with a paper towel.
  • Heat 1 tablespoon of oil in a pan over medium-high heat. Toast the walnuts for 2 minutes until fragrant, shaking the pan occasionally. Quickly cook the witlof for 1-2 minutes until it wilts. Transfer to a bowl and mix in cheese and chives.
  • Slice the beef into 1cm-thick slices across the grain, add to the salad, toss gently to combine, and divide among serving plates. Serve immediately.
