Kid-friendly fennel and apple muffins for just $1.17 each - a delicious and affordable treat!
Ingredients:
  • 450g fennel bulb, trimmed
  • Olive oil spray
  • 3 eggs
  • 107.50 gm caster sugar
  • 120g tub apple purée
  • 125.00 gm almond meal
  • 3.00 gm baking powder
  • 1.25 gm ground cinnamon
  • 49.50 gm self-raising flour
  • 200ml tub crème fraîche
  • 12.00 gm icing sugar mixture, sifted
  • Thinly sliced apple, to serve
  • Honey, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Line a baking tray with baking paper. Slice fennel into 1cm-thick slices, place on the tray, and spray with oil. Bake for 30 minutes until tender. Let cool for 10 minutes before serving.
  • Place the fennel in a food processor and blend until nearly smooth. Next, lower the oven temperature to 180C/160C fan-forced and prepare a 12-hole muffin pan by lining it with paper cases.
  • Combine eggs, caster sugar, apple purée, and fennel in a bowl and whisk until smooth. Fold in almond meal, baking powder, cinnamon, and flour until just combined.
  • Divide the mixture equally into the paper cases. Bake for 20 to 25 minutes or until a skewer comes out clean when inserted into the center of a muffin. Allow to sit in the pan for 5 minutes, then transfer onto a wire rack to cool completely.
  • With an electric mixer, whip crème fraîche and icing sugar until soft peaks form. Spoon crème fraîche frosting onto muffins. Garnish with apple slices and a honey drizzle. Serve promptly.
