Make a show-stopping fennel and garlic BBQ roast pork for your loved ones.
Ingredients:
  • 6 garlic cloves, crushed
  • 20.00 ml mustard seeds
  • 1.8kg pork boneless leg roast
  • 3 fennel, trimmed, cut into wedges, fronds reserved
  • 120g pkt Brand Superfood Leaf Blend Salad Bag
  • Coles Bakery Pane Di Casa bread, to serve
Instructions:
  • Heat up the barbecue on high heat.
  • In a small bowl, mix garlic, fennel seeds, and mustard seeds. Season with salt and pepper. Rub the mixture all over the pork. Place fennel in a disposable baking tray and top with pork. Cook the pork on indirect heat in a covered barbecue for 30 minutes. Reduce heat to low and continue cooking on indirect heat for 1 hour and 30 minutes, or until pork is cooked through.
  • Take the pan off the heat. Let it rest, covered with foil, for 20 minutes. Serve the pork and fennel with a mixed salad, bread, and the remaining fennel fronds.
